Annie writes: "Shrove Tuesday is early this year. If pancakes bore you try these yummy fritters. You can use the batter for bananas or any fruit if you fancy."

Ingredients

2 Bramley apples (or apples with a sharper flavour).

For the batter: 125g/4oz plain flour.

Pinch of salt.

2 eggs.

15ml/1tbs sunflower oil.

50g/1¾oz caster sugar.

150ml/¼pt milk.

Sunflower oil for frying.

Caster sugar for sprinkling.

Method

Whisk the flour, salt, milk, one whole egg and one yolk, oil and sugar together in a blender. Transfer to a bowl and leave to rest, if possible, for a few minutes. Peel and core the apples and cut into discs between 5-10mm thick.

Whisk the remaining egg white until stiff and fold into the batter. Coat each apple slice on both sides and shallow fry in some hot oil in a frying pan (enough to cover the base). Fry until golden underneath then turn over and repeat. Remove from the pan and rest on some kitchen paper. Eat straight away with a generous sprinkling of caster sugar.
