Officers investigating the incident cordoned off the scene and spoke to staff yesterday.
A nearby business owner, who asked not to be named, said: "I saw a police car at the scene and it was all taped off. It's awful what has happened to the man. I really hope he is okay. The owners of Moo Moo do their best to stop any trouble outside, but you can't stop everything. I would have moved a long time ago if they hadn't done so much to try to stop trouble."
Colin Pilsworth, co-ordinator of Cheltenham Safe, a crime reduction scheme, said the town centre was not a dangerous place.
He said: "Obviously incidents will happen when you get a mix of people and alcohol, because common sense and social restrictions can go out of the window.
"The police keep telling us that the figures for crime in the town centre keep going down, and that's a good sign. But we will never eradicate crime completely, because when people consume alcohol, their sense of right and wrong can disappear."
Police are urging anyone who witnessed the attack or anyone who was in Moo Moo shortly before the incident to contact them. Anyone with information should call police on 101 quoting incident 24 of November 13. Alternatively, call Crimestoppers anonymously on 0800 555 111 or go to Crimestoppers-uk.org
